Your fuel delivery is being restricted. I would suspect a bad fuel filter
or fuel tank vapor return preventing fuel from reaching your carbs in
sufficient quantity when you are at speed.
I have also had a bad coil give these symptoms if it has a crack which only
causes failure at a higher temperature. Fuel delivery seems more likely,
though.
