John,
I'm running an old set of Bridgestone A/T 205/75r15 tires. These are 
NLA.  They fit fine. No interference problems. In the past I ran 
passenger car tires in the same size.  The Bridgestone doesn't quite fit 
in the storage well behind the front seat pushing the seat forward about 
1/2" however other passenger tires fit fine.

Take a look at tirerack.com for a selection of this size tires. Sadly 
none are strictly light truck rated however there is a Firestone A/T 
that looks nice.
Load ratings are 1598 and 1609 lbs with 44psi inflation.
